Summer Cocktails
Our summer cocktails are perfect for adding a refreshing twist to your sunny days. From frosé to Mai Tai, your summer just got tastier.
Ice Cream Maker Frosé
Ingredients
- One 750-milliliter bottle rosé wine, chilled
- 2 cups strawberries, hulled and halved, plus extra for garnish
- 1/2 cup superfine sugar
- Juice of 3 lemons
Instructions
- Begin by placing the chilled rosé, hulled and halved strawberries, superfine sugar, and freshly squeezed lemon juice into a blender.
- Blend the mixture until it reaches a smooth consistency.
- Transfer the blended mixture into an ice cream maker.
- Set the ice cream maker to its coldest setting and churn the mixture for 45 minutes to an hour, or until it thickens into a slushy texture.
- Once ready, pour the frosé into wine glasses.
- Garnish each glass with additional strawberry halves for a delightful touch.
Marvelous Mai Tai
Ingredients
- 1 cup demerara sugar
- 1 ounce fresh lime juice (from about 1 lime, halved crosswise), reserve one half of the spent rind for garnish
- 1 ounce gold rum
- 1 ounce light rum
- 3/4 ounce orange curaçao
- 1/2 ounce orgeat syrup
- Fresh mint sprig, for garnish
Instructions
- In a small saucepan, combine the demerara sugar with 1/2 cup water. Cook over medium-low heat, stirring until the sugar completely dissolves, which should take about 5 minutes.
- Transfer the demerara syrup to a small bowl and let it cool completely, roughly 15 minutes.
- In a cocktail shaker, combine the fresh lime juice, gold rum, light rum, orange curaçao, orgeat syrup, and 1/4 ounce of the prepared demerara syrup. Add 1 cup of ice.
- Shake the mixture vigorously for about 10 seconds or until well chilled.
- Pour the mixture into an old-fashioned or rocks glass.
- For the garnish, insert the stem of a fresh mint sprig into the center of the cut side of the reserved lime half. It should resemble a palm tree on a floating island.
- Place the garnish into the drink, lime-side down.
White Sangria
Ingredients
- 3 tablespoons sugar
- 3 shots Calvados or other apple liquor
- 1 lime, sliced
- 1 lemon, sliced
- 2 ripe peaches, cut into wedges
- 3 ripe green apples, seeded and cut into wedges
- 1 bottle white Rioja Spanish wine or other dry white wine
- 1 pint raspberries
- Sparkling soda water, for topping off glasses of sangria at the table
Instructions
- In a large pitcher, combine the sugar and Calvados. Stir until the sugar begins to dissolve.
- Add the sliced lime, sliced lemon, peach wedges, and apple wedges to the pitcher.
- Pour the bottle of white Rioja wine over the fruit mixture.
- Cover the pitcher and refrigerate for several hours to allow the flavors to meld.
- When ready to serve, spoon some of the marinated fruit into each glass or goblet, adding a few fresh raspberries to each.
- Pour the chilled sangria over the fruit in each glass.
- Top off each glass with a splash of sparkling soda water for a refreshing finish.

Tropical Mocktail
Ingredients
- 3/4 cup pineapple juice
- 1/2 cup mango juice
- 1/4 cup fresh lime juice
- 1 cup (8 ounces) ginger beer
- Pineapple wedges, for garnish
- Mango slices, for garnish
Instructions
- Fill a cocktail shaker with ice.
- Pour in the pineapple juice, mango juice, and fresh lime juice.
- Shake the mixture vigorously to combine and chill the juices.
- Strain the mixture into ice-filled highball glasses.
- Top each glass with ginger beer, giving it a fizzy finish.
- Garnish with pineapple wedges and mango slices.
Pretty in Pink Paloma
Ingredients
- 2 tablespoons grapefruit juice
- 2 tablespoons pomegranate juice
- 1 teaspoon honey
- 3 ounces (6 tablespoons) grapefruit-flavored seltzer
- 1 teaspoon pomegranate seeds for garnish
Instructions
- Place 3 to 4 medium ice cubes into a cocktail shaker.
- Add the grapefruit juice, pomegranate juice, and honey to the shaker.
- Shake well to ensure the honey dissolves completely.
- Strain the mixture into a 5- to 7-ounce coupe glass.
- Top off the drink with grapefruit-flavored seltzer for a refreshing fizz.
- Garnish with pomegranate seeds for a burst of color.
Mock Mule
Ingredients
- 6 ounces ginger beer
- 3 ounces lime-flavored seltzer
- 1 large piece candied ginger, roughly chopped
- Lime wedge, for garnish
Instructions
- Fill a 16-ounce copper mug with crushed ice.
- Pour the ginger beer and lime-flavored seltzer over the ice.
- Stir gently to combine.
- Garnish the drink with the roughly chopped candied ginger and a lime wedge.
